兰州牛肉面 - Lanzhou Beef Noodle

    兰州牛肉面俗称“兰州牛肉拉面”是兰州最具特色的大众化经济小吃,也是遍布长城内外、大江南北的面食快餐。史料记载兰州牛肉面始于清朝嘉庆年间,系东乡族马六七从河南省怀庆府清化人陈维精处学成带入兰州的,经后人陈和声、马宝仔等人以“一清(汤)、二白(萝卜)、三红(辣子)、四绿(香菜蒜苗)、五黄(面条黄亮)”统一了兰州牛肉面的标准,即牛肉汤色清气香;萝卜片洁白纯净;辣椒油鲜红漂浮;香菜、蒜苗新鲜翠绿;面条则柔滑透黄。

    兰州拉面是一手绝活,需经捣、揉、抻、拉、摔、掼等操作环节,拉出的面条柔韧绵长,粗细均匀。 根据客人的爱好,面条可拉出大小粗细不同的形状,可选择有粗、二细、三细、细、毛细、大宽、宽、韭叶、和“荞麦楞”等款式。

    1999年,兰州牛肉面被国家确定为中式3大快餐试点推广品种之一,被誉为“中华第一面”。

    2007年,兰州牛肉面被市政府列入第一批非物质文化遗产保护名录。
